I have spent this last week creating a dessert menu for the restaurant “Le Garde Champêtre”, a beautiful restaurant in Champagne, Côtes des Bar, France.
Their philosophy is working with fruits and vegetables grown
in their own organic farm, and from the best local producers.
I’ve been forming
their kitchen brigade and creating their
dessert menu, inspired by these seasonal and organic veggies and fruits. They
even produce their own honey!
